Lobster is quite expensive to buy so be very wary of trying out a new lobster recipe, if you do not like it then the whole meal could be ruined. Experiment with other fish or seafood such as prawns or fish fillets if you are trying out a new sauce, while the taste will be quite diferent you will know if the sauce or added ingredients are to your taste.

I always adopt the following rule when cooking any dish for a dinner party. Always cook the dish at least twice before using it on your dinner party menu.

This way you will be confident of cooking it correctly and will quite probably find ways to improve the dish. I cannot recall cooking a dish for the first time without tasting and trying to figure out a way to improve it.

Experiment, try new flavours and cooking techniques, you will get failures but these will pale into insignifigance when you get it just right.
