Lobster Spring Rolls




Ingredients for the lobster spring rolls

Cooked lobster

Spring roll wrappers or filo pastry

Spring onions

Bean sprouts

Oyster sauce

Method

Saute very quickly the finely chopped spring onions and add the bean sprouts. Add oyster sauce to taste Allow to cool and add the cooked lobster mix well

Take spring roll wrappers or 2 layers of 5" squares of filo pastry (My preference)

Add a couple of teaspoons of filling to the centre of each wrapper. starting at one corner roll over the top of the filling.

Wet the edges and then fold in the two side corners, seal with a little water and roll up into a cigar shape.

Complete making ther batch and keep under a dampened tea towel.

Heat up oil to a medium temperature and add two or three of the rolls, deep fry until golden brown and drain on kitchen roll.

Keep warm and serve immediately as soon as they are ready.

I like to serve mine with a mixture of dips such as soy sauce, plum sauce or a sweet chilli.

I like to serve these as a starter but the choice is yours, served up as a main course with a nice salad or stir fried crispy vegetables is also another great way to enjoy these.
